🛒 Ingredients
1 Lemon
1 Bell pepper
3 Tomato
3 c. à soupe Extra virgin olive oil
1 Cucumber
200 g Quinoa
👨‍🍳 Instructions
1. Cook the quinoa, rinse with cold water to cool quickly.
2. Cut tomato, cucumber and pepper into small cubes.
3. Mix cooled quinoa and vegetables.
4. Season generously with lemon juice, olive oil, salt and pepper.
5. Refrigerate for 30 minutes before serving so that the flavors mingle.
