Tabbouleh quinoa with herbs

Healthy version of Lebanese tabbouleh with quinoa, fresh parsley and tomatoes.

🛒 Ingredients
150 g Quinoa
1 Lemon
1 Cucumber
1/4 Onion
3 Tomato
3 c. à soupe Extra virgin olive oil
1 c. à soupe Dried mint
2 c. à soupe Dried parsley
1 pincée Fine salt
👨‍🍳 Instructions
1. Cook the quinoa, let cool completely.
2. Crush the tomatoes, finely slice the cucumber and onion.
3. Mix cold quinoa, vegetables, dried parsley, dried mint.
4. Season generously with lemon, olive oil, salt, pepper.
5. Refrigerate for 30 minutes and serve well chilled.
