🛒 Ingredients
120 g Rice noodles
1/2 Lemon
1 Carrot
2 cm Ginger
1 Onion
50 g Spinach
200 g Tofu
100 g Mushrooms
👨‍🍳 Instructions
1. Prepare the broth: simmer onion, carrot, ginger and mushrooms in 1.5 L of water for 20 min.
2. Filter the broth, return to heat.
3. Cook the rice noodles according to the instructions.
4. Add the diced tofu to the hot broth for 3 min.
5. Serve with the noodles, sprinkle with broth and garnish with spinach and lemon.
