🛒 Ingredients
4 Eggs
4 Tomato
1 Bell pepper
1 Onion
2 gousses Garlic
1 c. à café Ground cumin
1 c. à café Smoked paprika
1 pincée Cayenne pepper
2 c. à soupe Extra virgin olive oil
1 c. à café Dried parsley
👨‍🍳 Instructions
1. Brown onion and garlic in olive oil for 3 min.
2. Add diced pepper, cook for 3 min.
3. Add crushed tomatoes, cumin, smoked paprika, cayenne pepper, salt. Simmer for 10 mins.
4. Form small wells in the sauce and break in the eggs.
5. Cover, cook for 6-8 minutes until white is set and yellow is still runny. Sprinkle with parsley.
