🛒 Ingredients
1 Lemon
1 gousse Garlic
2 Carrot
1 c. à soupe Sesame seeds
1 c. à café Dried mint
80 g Edamame
1 c. à soupe Extra virgin olive oil
1/2 Cucumber
120 g Rice noodles
👨‍🍳 Instructions
1. Soak the rice vermicelli for 10 minutes in hot water, drain.
2. Grate carrots and cucumber into fine julienne.
3. Mix lemon juice, olive oil, garlic and dried mint for the dressing.
4. Combine vermicelli, vegetables, edamame and vinaigrette.
5. Garnish with sesame seeds and serve chilled.
