Buckwheat salad and grilled vegetables

Cooked buckwheat, grilled vegetables (zucchini, pepper, mushrooms) and Herbes de Provence vinaigrette.

🛒 Ingredients
160 g Buckwheat
1 Lemon
1 Zucchini
1 Onion
1 Bell pepper
2 c. à soupe Extra virgin olive oil
1 c. à café Herbs of Provence
100 g Mushrooms
👨‍🍳 Instructions
1. Cook the buckwheat for 15 minutes in boiling salted water. Drain and let cool.
2. Cut zucchini, pepper and mushrooms, grill for 10 minutes in a pan with olive oil.
3. Slice the onion.
4. Prepare the vinaigrette: lemon, oil, Provence herbs, salt.
5. Mix buckwheat, grilled vegetables, onion and vinaigrette. Serve warm or cold.
