Quinoa salad with herbs and lemon

Fresh salad inspired by tabbouleh, with quinoa, fresh herbs, tomato and cucumber.

🛒 Ingredients
3 Tomato
1 Lemon
1 Onion
1 c. à café Dried mint
2 c. à café Dried parsley
3 c. à soupe Extra virgin olive oil
200 g Quinoa
1 Cucumber
👨‍🍳 Instructions
1. Cook the quinoa for 12 minutes, drain and let cool.
2. Cut tomatoes and cucumber into small cubes, slice the onion.
3. Mix quinoa, vegetables, parsley and dried mint.
4. Season with olive oil and generous lemon juice.
5. Refrigerate 30 minutes before serving.
