150 g Green lentils
1 Lemon
1/2 Onion
1/2 c. à café Ground cumin
2 c. à soupe Extra virgin olive oil
👨‍🍳 Instructions
1. Cook the green lentils for 20 minutes in salted water, drain.
2. Cut the cooked beetroot into cubes.
3. Prepare the vinaigrette: olive oil, lemon vinegar, cumin and salt.
4. Mix lentils, beetroot and chopped onion.
5. Drizzle with vinaigrette and serve warm or cold.
