1 Lemon
1 Carrot
1 Grenade
1 c. à café Dried mint
2 c. à soupe Extra virgin olive oil
100 g Quinoa
1/2 Cucumber
👨‍🍳 Instructions
1. Cook the quinoa according to the instructions and let cool.
2. Peel the pomegranate and collect the seeds.
3. Prepare a vinaigrette with lemon juice, olive oil and dried mint.
4. Mix quinoa, pomegranate, diced cucumber and grated carrot.
5. Drizzle with vinaigrette and serve chilled.
