Bean quinoa and lemon salad

🛒 Ingredients
120 g Quinoa
1 Lemon
1/2 Onion
200 g Beans
1 c. à café Dried mint
1 pincée Black pepper
2 c. à soupe Extra virgin olive oil
1 pincée Fine salt
👨‍🍳 Instructions
1. Cook the quinoa for 15 minutes, let cool.
2. Cook the beans for 5 minutes in boiling water, drain.
3. Finely slice onion, chop dried mint.
4. Prepare the vinaigrette: lemon, olive oil, salt, pepper.
5. Mix quinoa, beans, onion, mint and vinaigrette. Serve chilled.
