🛒 Ingredients
2 Bell pepper
4 Tomato
3 gousses Garlic
2 Zucchini
1 Onion
2 c. à café Herbs of Provence
1 c. à café Dried thyme
1 pincée Fine salt
3 c. à soupe Extra virgin olive oil
👨‍🍳 Instructions
1. Cut zucchini, pepper, tomato and onion into cubes.
2. Brown onion and garlic in olive oil for 3 min.
3. Add pepper and zucchini, brown for 5 min.
4. Add tomatoes, Provencal herbs, thyme, salt, pepper. Cover.
5. Simmer for 40 minutes over low heat until soft. Serve hot or warm.
