🛒 Ingredients
300 g Chicken
100 g Spinach
150 g Brown rice
1 Onion
2 gousses Garlic
2 cm Ginger
150 ml Enriched almond milk
1 c. à soupe Coconut oil
2 c. à café Curry powder
1/2 c. à café Ground turmeric
👨‍🍳 Instructions
1. Brown onion, garlic and ginger for 3 minutes in coconut oil.
2. Add curry powder, turmeric, cook for 1 min.
3. Add cubed chicken, brown for 5 min.
4. Add almond milk and spinach, simmer for 15 min.
5. Serve over brown rice with lemon.
