Palak tofu curry spinach

🛒 Ingredients
250 g Tofu
200 g Spinach
1 Onion
2 gousses Garlic
2 cm Ginger
100 ml Enriched almond milk
1 c. à café Garam masala
1/2 c. à café Ground turmeric
1 c. à café Ground cumin
2 c. à soupe Extra virgin olive oil
👨‍🍳 Instructions
1. Brown onion, garlic and ginger for 3 minutes in olive oil.
2. Add garam masala, turmeric, cumin, cook for 1 min.
3. Add spinach, let melt for 3 minutes then mix roughly.
4. Add cubed tofu and almond milk, simmer for 10 minutes over low heat.
5. Season with salt, sprinkle with lemon and serve over brown rice.
