🛒 Ingredients
160 g Rice noodles
1 Lemon
2 gousses Garlic
1 Carrot
250 g Shrimp
1 c. à soupe Peanut butter
2 Eggs
2 c. à soupe Extra virgin olive oil
👨‍🍳 Instructions
1. Soak the rice noodles for 10 minutes in cold water, drain.
2. Beat the eggs and scramble them in an oiled pan. Reserve.
3. Brown the shrimp over high heat for 2 minutes. Add garlic and grated carrot.
4. Add the noodles, eggs, a spoonful of fish sauce (or tamari) and lemon.
5. Mix over high heat for 3 min. Sprinkle with crushed peanuts and serve with lemon wedges.
