Spinach
1 c. à café
Herbs of Provence
80 g
Mushrooms

Eggs
1 c. à soupe
Extra virgin olive oil
1 pincée
Fine salt
👨🍳 Instructions
1. Brown sliced mushrooms and spinach for 3 minutes in olive oil.
2. Beat the eggs with salt, pepper and Provence herbs.
3. Pour the eggs over the vegetables in the pan.
4. Leave to set over medium heat for 2 minutes, then fold the omelette in half.
5. Serve with fresh tomato slices.
