1/2 Bell pepper
1 Tomato
50 g Spinach
2 c. à soupe Cottage cheese
3 Eggs
1 c. à café Extra virgin olive oil
👨‍🍳 Instructions
1. Beat the eggs with a spoonful of fromage blanc, salt and pepper.
2. Brown pepper and spinach for 3 minutes in an oiled pan.
3. Pour the eggs over the vegetables and cook over medium heat for 3-4 minutes.
4. Fold the omelette. Serve with a tomato and fresh herbs.
