🛒 Ingredients
1 gousse Garlic
1 Tomato
100 g Spinach
1 pincée Black pepper
2 Eggs
1 c. à soupe Extra virgin olive oil
1 pincée Fine salt
👨‍🍳 Instructions
1. Melt the spinach in a pan with garlic and olive oil for 3 min.
2. Roast the tomato halves in the oven for 15 minutes at 180°C.
3. Bring water to a simmer in a saucepan, add a drizzle of vinegar.
4. Form a swirl and slide the broken egg into the center, cook for 3 minutes.
5. Serve: spinach, roasted tomato, poached egg and black pepper.
