Mackerel sweet potato curry

🛒 Ingredients
1 Lemon
300 g Sweet potato
280 g Mackerel
80 ml Enriched almond milk
80 g Greek yogurt
1 c. à café Ground coriander
1/2 c. à café Ground turmeric
2 c. à café Curry powder
👨‍🍳 Instructions
1. Peel and cook the sweet potato for 20 minutes, mash into a puree with almond milk and salt.
2. Season the mackerel fillets with curry powder, salt and pepper.
3. Cook them in the pan for 4 minutes on each side.
4. Prepare the sauce: Greek yogurt, lemon, turmeric, salt.
5. Serve: mash, mackerel, yogurt sauce and ground coriander.
