Lentil shepherd’s pie

Vegan version of shepherd's pie with green lentils and sweet potato puree.

🛒 Ingredients
200 g Green lentils
2 Garlic
1 Carrot
1 Onion
400 g Sweet potato
2 c. à café Herbs of Provence
1 pincée Black pepper
1 pincée Fine salt
2 c. à soupe Extra virgin olive oil
👨‍🍳 Instructions
1. Cook the green lentils for 20 minutes, drain.
2. Brown onion, garlic, chopped carrot with Provence herbs, salt, pepper.
3. Add the lentils, cook for 5 minutes together.
4. Steam the sweet potato, puree with olive oil and salt.
5. In a dish, alternate layers of lentils and puree, bake for 20 minutes at 200°C.
