60 g Spinach
1/2 Lemon
1 Carrot
1 Sweet potato
1 pincée Black pepper
1 pincée Fine salt
2 c. à soupe Extra virgin olive oil
30 g Nut
150 g Barley
👨‍🍳 Instructions
1. Cook barley according to instructions, let cool.
2. Roast the diced carrot and sweet potato in the oven for 25 minutes at 200°C.
3. Coarsely crush the nuts.
4. Arrange barley in bowls, add roasted vegetables, nuts, spinach.
5. Vinaigrette: olive oil, lemon, salt, pepper.
