🛒 Ingredients
300 g Chickpeas
1/2 Lemon
1 Carrot
2 cm Ginger
1 Onion
2 Sweet potato
80 g Spinach
1 c. à soupe Coconut oil
180 g Brown rice
👨‍🍳 Instructions
1. Brown onion and ginger in coconut oil for 3 min.
2. Add diced sweet potato and chickpeas. Brown for 3 min.
3. Pour 400 ml of coconut milk, turmeric, curry and sweet pepper. Leave to simmer for 20 mins.
4. Add the spinach and julienned carrot 3 minutes before the end.
5. Serve over brown rice with a lemon wedge.
