🛒 Ingredients
100 g Brown rice
2 gousses Garlic
1 c. à café Ginger
80 g Spinach
200 g Shrimp
100 ml Enriched almond milk
1 c. à café Curry powder
1 c. à soupe Coconut oil
20 g Grated coconut
👨‍🍳 Instructions
1. Brown the garlic and ginger in coconut oil.
2. Add the shrimp and sauté for 3 minutes.
3. Pour almond milk with grated coconut and curry.
4. Add the spinach and simmer for 3 minutes.
5. Serve over cooked brown rice.
