🛒 Ingredients
1/2 Lemon
1 Carrot
1 Sweet potato
150 g Broccoli
1 c. à soupe Sesame seeds
2 c. à soupe Peanut butter
2 c. à soupe Extra virgin olive oil
1 pincée Fine salt
120 g Quinoa
👨‍🍳 Instructions
1. Cook the quinoa, let cool.
2. Roast sweet potato, broccoli and carrot for 20 minutes in the oven at 200°C with olive oil.
3. Prepare the tahini sauce: peanut butter diluted with lemon, salt.
4. Arrange quinoa in bowls, garnish with roasted vegetables.
5. Top with tahini sauce, add sesame seeds and serve.
