Roasted vegetable quinoa bowl

🛒 Ingredients
1 Bell pepper
50 g Spinach
1/2 Lemon
1 Zucchini
200 g Broccoli
1 c. à soupe Chia seeds
2 c. à soupe Extra virgin olive oil
150 g Quinoa
👨‍🍳 Instructions
1. Preheat the oven to 200°C.
2. Cut broccoli, pepper and zucchini into pieces. Drizzle with olive oil, salt and bake for 20 minutes.
3. Cook the quinoa (2 parts water for 1 part quinoa) for 12 min.
4. Mix quinoa and vegetables. Add a handful of fresh spinach.
5. Season with olive oil, lemon and herbs. Sprinkle with chia seeds.
