🛒 Ingredients
1 Onion
300 g Sweet potato
2 Tomato
150 g Spinach
2 gousses Garlic
1/2 c. à café Ground turmeric
2 c. à café Curry powder
1 c. à soupe Extra virgin olive oil
120 g Brown rice
👨‍🍳 Instructions
1. Cut the sweet potato into cubes, brown with onion and garlic for 5 min.
2. Add curry, turmeric, crushed tomato.
3. Pour 150 ml of water, cover and simmer for 15 min.
4. Add the spinach, let it melt for 3 minutes.
5. Serve with brown rice.
